    On a chilly morning, brunch guests will be excited to tuck into this hearty autumnal breakfast. To make the dish vegetarian, simply omit the ham.
    Sweet Potato Hash with Poached Eggs
    Ingredients 2 orange-fleshed sweet potatoes, about 3/4 lb. total weight, peeled and cut into slices 3/4 inch thick 4 tsp. grapeseed or canola oil 1 cup finely chopped red onion 1/2 Granny Smith apple, cored and diced 3 oz. Black Forest ham, diced 2 tsp. fresh thyme leaves 1/4 tsp. sweet paprika 1 Tbs. distilled white vinegar 1 tsp. salt 6 eggs
